What are these?

These plants were all over Mexico. They aren't banana trees or birds of paradise. Can someone help?

Jeanine,
It looked so much like a banana tree to me, that I googled the term "banana flowers." After some searching, I found out the plant is often called a "Wild Banana" or "Crab Claws." It's pollinated by hummingbirds. The flowers are very long-lasting and frequently used in arrangements.
